Chicken Wild Rice Soup

Ingredients:
1/2 stick butter
1 cup wild rice
1/2 cup onion, chopped
2 stalks celery, chopped
1/4 lb chopped mushrooms
1/4 lb chopped carrots
1-1.5 tsp herbs de provence
1/2 tsp ground mustard
1/2 tsp curry powder
32 oz carton chicken broth
1 1/4 cups half-and-half
1/2 cup heavy whipping cream
1/2 tsp pepper
1/2 tsp salt
1/3 cup flour
1 lb smoked chicken breast, chopped up
1 Tbsp parsley
Directions:
Melt butter, add onions, carrots, and celery. Saute then add mushrooms.
Add flour and stir well. Gradually add broth, stirring constantly. Bring to a boil then reduce heat to a simmer.
Add rice, chicken, salt pepper, mustard, curry powder, parsley, and herbs de provence.
Allow to heat through then add half-and-half and cream. Simmer up to 2 hours- do not let boil or roux will break.
